Quinoa with Chick Peas

1 cupQuinoa
1 1/2 teaspoonSalt
1 3/4 cupBoiling water
1 cupLuna Chick peas
1Tomato, chopped
2 tablespoonsLuna Tomato Paste
1Garlic clove, crushed
3 tablespoonsLemon Juice
4 teaspoons Olive oil
1/2 teaspoonGround cumin
PinchBlack pepper
3 tablespoonsParsley, chopped


  • Rinse the quinoa using cold water.
  • Cook the quinoa in a medium covered pot of boiling salted water until tender for about 20-25 minutes.
  • Heat oil in saucepan and sauté garlic, chick peas, tomato, tomato paste, cumin, black pepper, and ½ teaspoon salt for 5 minutes then mix with the quinoa.
  • Garnish with parsley and serve.
