Ingredients
1 cup | Quinoa |
1 1/2 teaspoon | Salt |
1 3/4 cup | Boiling water |
1 cup | Luna Chick peas |
1 | Tomato, chopped |
2 tablespoons | Luna Tomato Paste |
1 | Garlic clove, crushed |
3 tablespoons | Lemon Juice |
4 teaspoons | Olive oil |
1/2 teaspoon | Ground cumin |
Pinch | Black pepper |
3 tablespoons | Parsley, chopped |
Directions
- Rinse the quinoa using cold water.
- Cook the quinoa in a medium covered pot of boiling salted water until tender for about 20-25 minutes.
- Heat oil in saucepan and sauté garlic, chick peas, tomato, tomato paste, cumin, black pepper, and ½ teaspoon salt for 5 minutes then mix with the quinoa.
- Garnish with parsley and serve.
